The Tawa is an iron plate commonly used in India to cook a variety of main dishes and breads. Through constant use, the Tawa is believed to accumulate and absorb a variety of flavors and tastes which enhance the flavor of food. Traditionally, it is used over hot coals. The Kadhai is an iron wok used over hot coals especially to cook chicken and lamb chili, hot delicates cooked in tomatoes, spiced with fenugreek and garnished with cilantro. The iron of the Kadhai is said to enhance flavors by releasing magic qualities of the “KADHAI” in to the cooking.
